Malabar Chicken Biryani

Ingredients- 15 Portions

CHICKEN MARINATION
  • 1.5 kg Chicken
  • 1 L Yogurt
  • Paste (Check recipe below)
  • Ground Spices ( Check recipe below)
  • 2 Tbsp Chilli powder
  • 1 Tbsp Turmeric Powder
  • 2 Tbsp Salt
GROUND SPICE
  • 2 Tbsp Black pepper
  • 2 Tbsp Cardamom
  • 2 Tbsp Fennel
  • 2 sticks Cinnamon
  • 1 Tbsp Cloves
  • 2 Nos Star anise
  • 2 Nos Mace
  • Roast and make into a powder
PASTE
  • 20 Nos Green chilly
  • 100 gm Ginger
  • 3 Bulbs Garlic
  • 1 Lime
  • Make a paste with all ingredients
CHICKEN CURRY
  • 1/2 cup Coconut Oil
  • 3 stalks Curry leaves
  • 3 Nos Sliced Onion
  • 4 Nos Chopped Tomato
  • Marinated Chicken

Heat oil in a Thick bottom Pan , add the curry leaves and add the sliced onions and saute for 4 minutes till the onions become soft.

Now add the Chopped tomatoes and cook for another 4 minutes

Now add the marinated chicken and cook till the chicken pieces are cooked.

RICE

1.5 Kg Basmati Rice

Soak the rice in water for 1 hour .

Boil water in a pot with salt.

Cook the rice till it is just cooked.

Drain and leave to cool down.

GARNISH INGREDIENTS
  • 3 nos onions golden fried
  • 1 Bunch Coriander Chopped
  • 1 Bunch Mint Chopped
  • 4 Tbsp Cashew nuts fried
  • 4 Tbsp raisins fried

Method For Finishing the Biryani

  1. When the chicken curry is ready, add some chopped coriander leaves and mint leaves
  2. spread half of the rice on top the curry evenly.
  3. sprinkle half of the garnish on the rice, drizzle 4 tbsp of ghee on top.
  4. Spread the remaining rice on top and sprinkle the remaining garnish on top.
  5. Cover with a tight lid and place a weight on top and cook on a medium heat for 30-45 minutes.
  6. Serve the Biryani hot.
