
Ingredients
Cottage Cheese Steak
- 120 gm Cottage Cheese slab ( 5 cm x 5 cm )- cut into 2 slices
- Marination
- 15 ml Olive oil
- 3 gm each -Oregano, Chilli flakes, cumin powder, Black pepper powder, salt
- Breading
- 30 gm Panko Bread crumbs ( can be substituted with regular crumbs)
- 1 no egg
- 20 gm All purpose flour
Pineapple Salsa- For Stuffing
- 30 gm Chopped pineapple
- 10 gm raisins
- 8 gm chopped onion
- 5 gm chopped garlic
- 3 gm chilli flakes
- 15 gm sugar
- 5 ml vinegar
- 2 gm salt
- 5 gm chopped coriander leaves
Spicy Tomato Sauce
- 20 gm Chopped deseeded tomato
- 10 ml canned tomato puree
- 8 gm chopped onion
- 5 gm chopped garlic
- 10 ml olive oil
- 3 gm chilli flakes
- 2 gm cumin powder
- 2 gm dry oregano
- salt as required
- sugar as required
Baked potato
- 1 no Medium size potato
- salt
- olive oil
Method
- Pineapple salsa
- Heat in a pan, saute onion, garlic for couple of minutes without colouring.
- Now add chilli flakes, pineapple and raisins and cook for another 3 minutes.
- Add sugar, salt . vinegar and cook till all the liquid has been reduced and tick into a syrup. Add chopped coriander and cool down.
- Spicy Tomato Salsa
- Heat oil in a pan and add chopped onion, garlic and saute for 3 minutes without colouring.
- Add the chilli flakes , chopped tomato , tomato puree, sugar and salt and let it cook for 10 minutes.
- Finish with cumin powder and oregano.
- Baked potato
- marinate the whole potato with olive oil and salt
- wrap up in a foil paper and bake at 200 C for 20 minutes or till the potato is cooked.press the potato to see if it is cooked.
- Cottage Cheese
- Marinate the cottage cheese slabs and pan fry to get golden brown colour on either side.
- Sandwich 2 slices with the pineapple salsa.
- Take the sandwiched cottage cheese slices and dust with flour all around.
- Dip in beaten egg and crumb it. Do a double crumbing on the exposed sides so that the filling remains intact.
- Deep fry the breaded cottage cheese steak until it gets a golden brown colour.
- Serve with spicy tomato salsa and baked potato.
